Blanc de Noir

Blanc de Noir - white wine made from red grapes. It is obtained at the first step in the pressing of the grapes, with the gentlest pressure, the "most nimble" part of the liquid with an almost transparent, flesh-colored colour is taken. The process stops when the first pick colour appears. The grape is a specific branch of Pinot Noir for champagne from the Gradec vineyard. A deep wine, even a little high-minded, it continues to evolve. It does not show as much fruit but is more neutral and can be served with difficult dishes - seafood, complex and elegant dishes.
